You know those giant tree trunk things you’re left with at the end of a good broccoli chop and prep? Don’t throw them out! There are so many ways to use these. The skin on them is incredibly thick and stringy, but once you peel all of it off, the inside is crunchy and yummo.
Here’s a quick and easy stir-fry recipe:
+ Peel broccoli stems.
+ Slice into angled rounds.
+ In a wok or pan, stir- fry with a TBS of sesame oil, a pinch of red pepper, and a dash of coconut aminos or soy sauce.
+ Cook until they start to turn a little brown.
+ Eat immediately or store for later after they cool.
